Pecan-Praline Dessert Topping

 

1/2 C. butter
1/2 C. dark brown sugar
3/4 C. heavy whipping cream
1/4 -1/3 C. chopped pecans

Melt butter in saucepan on med-low heat.  Add brown sugar and cook, stirring until bubbling.  Continue cooking and stirring frequently about 15 min.  Add pecans and bring to boil again.  Cook stirring frequently another 15 minutes.  Use to top ice cream, cheesecake or other desserts.  ENJOY!

*This sauce will burn easily if the heat is too high or stirring is too infrequent.

 

 

Tuscan Bruschetta Ranch Dressing

 

2 T. olive oil
1 clove garlic, mince or pressed
3 Roma tomatoes, seeds removed and chopped
1 T. fresh basil
Salt and pepper to taste

Bruschetta:

Sauté garlic in olive oil for about 3 minutes.  Add tomatoes, salt and pepper and sauté another 5 minutes.  Add basil and sauté until soft.  Remove from heat and cool.

Dressing:

Mix bruschetta with 2 C. prepared Ranch dressing.  Chill 30 minutes.  Enjoy!

 

 

** For a main dish treat:  Pasta Pomodoro

 Prepare double recipe of Bruschetta and serve topped on your favorite cooked pasta.  Add Chevre goat cheese and serve warm.  Delicioso!



Chicken Tortilla Soup

1 C. chopped onion
1 clove garlic, minced
5-6 C. chicken broth
1 can Rotel w/ green chilies
2 tsp. ground cumin
1 tsp. chili powder
1-1 ½ tsp. salt (to taste)
1/8 tsp. pepper
6 corn tortillas, cut into strips
½ C. shredded Monterey Jack cheese
½ c. shredded Cheddar cheese
1 can black beans- drained and rinsed
1 package frozen corn nibblets
¼ c. fresh cilantro
2 C. chicken breast – cut into bite-sized pieces
2-3 Tbs. lime juice

Sauté onion and garlic in a little oil until translucent.  Add lime juice and chicken and cook until done.  Add broth, Rotel, black beans, corn, cumin, chili pepper, salt and pepper.  Boil for 15 mins.  Add cheese, cilantro and tortillas.  Continue to simmer another 10 min. Let stand 10 min. then serve w/ favorite garnish.
